Gingerbread Whimsy Cake

With or without the charming gingerbread cookie toppers, this stunning one layer gingerbread cake, loaded with spices and studded with fresh ginger and pecans, is piled high with delicious, fluffy meringue giving it the whimsical look of a snow capped mountain.

This cake evoked plenty of “Er. Maw. Gawd!” responses when served, and was declared a hands-down holiday winner. And I’m going to let you in on a secret…ginger isn’t my favorite thing, but one bite into this cake, and I was ready to snarf the whole cake down.
