Lemon Fig Cake

This is a cake available only when figs can be found in NH - which is exceptionally random - but when they can be found, this cake is stunning in its flavor profile: fluffy lemon ricotta cake is topped with chopped figs. As the cake bakes, the figs roast and caramelize, resulting in an intense nuttiness that pairs so beautifully with the light lemon flavor in the cake.

This cake makes me want to move to Mediterranean climates where figs are abundant almost year round. For now, I suffer through the winters, and savor this cake when I can in the summer…and you should too. While this is a humble cake, it does come at a price because of the price of the figs, but you’ll love it’s simply elegant flavor profile.
