I have a deep affinity for humble, understated cakes. I’ve eaten some gorgeously decorated cakes that lacked flavor, and I’ve also eaten some of the most "“boring” looking cakes that were divine in flavor.

This Polenta Almond Cake is perhaps the most humble and understated of all the cakes I make, but it also is as unique as it sounds and surprisingly delicious. Made from finely ground cornmeal - Farina Bona (finest ground cornmeal) from Ticino, Switzerland in the Italian region - and finely ground almonds, the taste of this humble cake will absolutely surprise you with the subtle citrus flavor that comes through!

And, it’s naturally gluten free!

She will come to you humbly adorned with a sifting of powdered sugar, and you will dress her up to be the talk of the town (or dinner party) with fresh whipped cream and berries. Or have your cake and eat it plain with a cup of tea or coffee. The choice is all yours!
