Cocoa Peppermint Meringues

While this flavor combo has some roots in the winter months, I’d happily eat these airy babies any time of the year.

Crispy, airy, some deep inner chewy parts, full of protein from the egg whites, mildly sweet, pepperminty and chocolatey without being overwhelming…altogether, wholly satisfying.

These will make the perfect snack with coffee or tea any time of day without blowing your caloric intake or whatever diet you claim to be on whilest eating cookies. Consider them protein cookies because of the amount of egg whites in them. Truly, there isn’t much sugar in these, so they have a guilt-free quality to them.
