Perhaps I should’ve named these The Queen’s Cookie - because you will feel royal when eating these - but that name invokes ideas of HRH the British Queen, not necessarily me, your Queen Bee…. [I digress]
What is a Goddess Cookie, you ask?
Envision a soft cookie with oodles of texture that combines crunchy pistachios with creamy white chocolate, chewy tart cherries, and is rounded out with the floral notes of rose. Hell of a combo, huh?!
And why is it named such? I feel the woman who developed this recipe, which I then adapted, is a goddess; therefore, making me a goddess by extension of my adaptations.
It feels like a cookie that should be reserved for the gods and goddesses of the past - or the Queens & Kings of today, however one choses to identify; so allow yourself a moment of royal indulgence, and take the plunge on these cookies. You won’t regret it.
