Luscious Lemon Cookies **

When life gives me lemons, occasionally, I make lemonade, but I’m more apt to make cakes, cookies, marmalades, and all things deliciously tart and sweet.

Behold the lovely Lucious Lemon Cookie. Buttery, ridiculously tangy with tart lemon, and sparkly! They’re slightly crisp on the edges and softer everywhere else. These lemon cookies will brighten the darkest of winter days or liven up the longest of summer ones!

One batch makes 3 dozen cookies, so you can brighten the day of plenty of people. And don’t be daunted by the number of cookies - you might find you will eat more than one (or three). Life experience has told me such. And they will freeze beautifully!

Lucious Lemon Cookies are a yearlong treat: In the summer, plop a scoop of lemon sherbet in between 2 and make a dreamy ice cream sandwich. In the winter, let the bright flavor remind you of the summer sun that is to come.
