But I challenge you to move beyond the traditional into a kicked up, grown up version that has a far most robust peanut flavor from the roasted peanuts that are in the base of this cookie. This adult version is nowhere near as cloyingly sweet as the one you remember as a kid; it’s topped with a Valrhona 40% milk chocolate medallion AKA an insanely delicious French milk chocolate. The end result is a mildly sweet, intensely peanuty base that melds with rich, velvety milk chocolate.
