Salted Gingerbread Caramels **

Every Christmas morning from the time I remember having teeth, my Grandfather and his wife would show up at our door with huge boxes and bags of Russell Stover chocolates at 7am sharp; they had driven to one of the outlets the week prior and bought my sister and I 5 lb bags of the bloopers (the ones that didn’t set up in the molds properly). I would get the completely dilapidated chocolate covered caramel Santas, Christmas trees, and other wannabe Christmas shapes, and my sister would get the same sack of sad looking wannabe Christmas forms, just in chocolate covered marshmallow.

After my Grandfather would give us each a hug and a smooch, my sister and I would rip into our respective bags, gorging ourselves on about 2 lbs of chocolate covered delights before we were groaning of upset stomachs. And therein, my love of caramel was born. I’m surprised I didn’t get my first cavity until I was about 15 years old.

I now love caramels of all flavors, so when I came across this fun variation, it was a must try.

Deep in color from the molasses and with all the warm flavors of gingerbread, these buttery, salty delights will bring a delightful warmth to your winter season, any gift basket, or just a bowl on your kitchen counter where you can nosh on these for weeks.

Honestly, who needs an occasion to have caramels? And who says you can only have gingerbread in the winter months? Fools, I say. Fools.
