Fall just might be my favorite time of year - the colors, the the flavors, the smells. Late summer melds into shorter days and cooler nights, and the trees begin to paint the horizon with their brilliant display of color. Stone fruits ripen for the last time until warmer days next year, and sweet grapes are ready to be harvested. The smell of warm spices and apples permeate the air, pears hang heavy from their limbs, and you know you’re contemplating hanging out in a pumpkin patch to look for the Great Pumpkin, just like Charlie Brown.

Warm spices, cool days, sweater weather, warm apple cider, pumpkin patches, corn mazes, cozy fires, and apple picking. It’s my happy place.

Sometimes the inner workings of a humble looking cake need to be shown in order to fully appreciate what makes the otherwise simple appearance utterly phenomenal in taste. the last picture is the inside of the humble looking Asian Pear Cake. But if you’ve never had an Asian pear, then you don’t know that while they soften some while baking, they don’t totally lose their crispness, and this cake is STUDDED with chunks of Asian pears and two layers of sliced pear pieces. Combined with her hearty dose of warm spices and citrus twist, she makes for a truly unique, mouth-watering cake where you can fully appreciate every component of the flavor profile.

She needs nothing, but if you want to dress her up, maybe a light dusting of confectioner’s sugar will do.

In New England, we have a multitude of versions of every season before the weather actually plays the real part of the season.

Sometimes a passing thought becomes a delicious recipe! This is my own recipe, which is a riff off the Asian Pear Cake I make. See those hunks of fruit? Those are Asian Pears from our orchard, and these Asian Pear scones are deliciously spiced with warm Fall spices and a hint of citrus.

An Asian Pear is one of those unsung hero fruits not too many people know about. It looks like an apple, crunches like an apple, but tastes like a pear. This fruit is not a hybrid, but a varietal that has been grown for close to 3,000 years in Asia, and oddly grows quite well here in Northern New England.

Harvested from our property in the early-mid Fall, these delicious pears keep their delightful crunch when baked. With the combination of warm spices, you’ll be cozying up with a cup of coffee or tea and watching the foliage turn. I couldn’t resist putting one against the backdrop of the stunning foliage that was coming to a peak!

I challenge you to eat just one. No one I’ve known has pulled this off. They’re so good, you go back in for second breakfast and elevensies (if you’re a Hobbit).

This cake surprised everyone when they first tried it with how good it was (and it was gluten free by request). It’s a brilliant combination of spices that pair gorgeously with the pears on top. Step 1: grow and harvest your own Concord grapes. Most often, I allow the grapes to go through a mild frost and the grapes are slightly sweeter because of it (see grapes on vine image).

Step 2: Employ your children to go harvest grapes. They must earn their keep somehow.

Step 3: Deftly sieve the seedy grape pulp and skin, collecting only the juice and minimal sediment, and proceed to make the world’s best Concord Grape Jelly.

It’s called Queen Bee’s because it’s truly fit for a Queen (or King)  

I challenge you to compare my 3 simple ingredients- grapes, real sugar, and pectin - to some of the best known supermarket brands. Sure, you can buy nothing short of a tub of some well known brands for $3. But please think about this for a moment...a 32oz tub for $3.

Ripe cranberries come from bogs all over northern New England. I happen to have found a haven for huge, bursting bright with tart flavor, cranberries from Vermont. Who knew, right!?

This brilliantly hued marmalade - like the cranberries themselves - create magic in a pan when combined with thinner slices of oranges. The orange sweetens the tang of the cranberries, leaving a brightly tart, yet deliciously sweet mixture. This is a delicious merriment of both the cranberry orange relish and homemade cranberry sauce that are famous on Thanksgiving tables: the bright tart flavor of cranberry and the sweet tartness of the whole orange with the consistency of homemade cranberry sauce. With a kaleidoscope of color, but more importantly FLAVOR, my ridiculously delicious Peach Salsa is made from our own peaches and honey (and occasionally jalapeños)!

This is a mild-medium spicy fruit salsa - no tomatoes here - that works heavenly with tortilla chips, but change up your routine and sass up your dinner by using this as a marinade for chicken or on top of fish. While the tree ripened peaches shine in this salsa, it is a sweet-savory salsa with all the traditional flavor notes of salsa.

The only thing I promise you is that you will fall in love with this and store bought fruit based salsas will never compare - yeah, I’m that confident in this salsa. You might want to order more than one jar…
